There isn't a blueprint for what I'd like to accomplish. Trust me I checked! There is no path nor precedent….so as Les Brown says, “Do not go where the path may lead, go where there is no path and leave a trail.”
When I started the concept of Gaiya’s Harvest I didn’t know what it would look like today. I just knew I needed a creative outlet, a way to express my style of cuisine. I wasn’t planning a plant-based concept either, but my transition to eating a vegan diet was happening at the same time. It was, in a way, the start to an inward focused journey.
I’ve explored and lived the vegan lifestyle and found my place under a more fitting title of plant-based. The chef and empathetic soul in me understands that it is only through compassion and understanding of each other’s perspective that will lead to a more sustainable food future. I love to showcase vegetables as the main component in a dish. I love surprising people with first time experiences, or maybe reintroducing an ingredient that they otherwise didn’t care for.
The key is to be flexible and open to receive new experiences and new information. Being able to adapt to new thought patterns and listening to that inner knowing that guides us to make the best decisions for ourselves.
I’d now like to share three solid pieces of advice that I have learned from my own life experiences:
*Give people more than what they are expecting from you.
*It’s all in the details. Don’t skip the details.
*True power lies in equanimity.
